In August 2022, the original Chago’s location shuttered its doors. Soon after, the team behind local Nashville restaurants Green Hills Grille and Mere Bulles acquired the building, and are currently in the process of renovating the space to upgrade almost everything.
Brothers Steven and Christopher Smithing are the owners behind the helm, and Director of Operations Brandon Styll is in charge of logistics.
What Now Nashville spoke with Styll about the team’s plans for the new Chago’s.
“It’s gonna be a complete overhaul of what it once was. We’re putting in a brand new bar, new walls, new restrooms, a custom mural, it’s going to be a complete update,” Styll said in a phone interview.
The Mexican-American eatery will serve a variety of well-loved dishes, as well as offering a full bar. The main goal of the new-and-improved Chago’s is to keep a local staple alive within Nashville’s close-knit restaurant community.
“With Mere Bulles and Green Hills Grille, we’re operating local, community-driven restaurants. Looking at Nashville recently, it’s been a trend to see a lot of great restaurants eventually go away, and we want to prevent that. We want to revitalize and bring back these essential local spots. Just like our other two restaurants, we have so many regulars who come visit and they’re why we do what we do. A lot of our regulars are also in the local restaurant scene themselves. The heart of what we do is providing a great atmosphere, great service, and great food for the community,” Styll shared.
