Coffee Shop Planning First Brick-and-Mortar

Coffee shop Now and Then, which has been operating inside chef Sean Brock’s Audrey at 809 Meridian Street, announced earlier this month in a Facebook post that the coffee shop’s first brick-and-mortar location is on its way to East Nashville.

Demi Chacon and Davy Ball launched the concept three years ago, focusing on envisioning a new coffee shop experience, according to the post.

“It began with a simple question: What makes a great experience? At that time, the coffee industry seemed to be moving toward faster, more automated service — focusing on efficiency and speed. But at what cost? If speed is the goal, where does that leave room for connection? Or for sharing the story of the coffee, the drink, and person or people who produced it?” the post states.

With Brock’s support, Chacon and Ball began to operate their concept in Nashville in 2023. Now and Then currently operates as a 10-seat coffee experience in Audrey.

“Here we are, over [a] year later — grateful, humbled and excited for what’s ahead,” the post reads. “With that, we are thrilled to officially announce Now And Then will be opening our brick-and-mortar location here in East Nashville.”

The post was accompanied with a photo of one of the owners holding a key to the new space. However, the team has not revealed the exact address as of yet, and the opening date has not been announced. Further information regarding the design and space also remains unknown.

What Now Nashville reached out to Chacon for more information, but she declined to comment.
