Rony Stark, the owner of local Italian restaurant brand PennePazze, has shared that his new gelato concept, GelatoPazzo, is expected to go in at Stockbridge Capital’s Canteen on Carothers development in Franklin.

What Now Nashville recently reported on the first location for the new concept, which will debut at the Starling complex in Germantown in 2025 alongside a new PennePazze location.
Stark has now revealed that GelatoPazzo will be going in at the new development in Franklin, which will also welcome a fourth PennePazze location.
GelatoPazzo will bring a modern Italian shop feel to the ice cream scene in Nashville. The concept will serve gelato in a Sicilian style, with fresh brioche bread.
The Canteen on Carothers development is currently under construction in Franklin. It will feature 28,000 square feet of retail and restaurant space across six buildings, as well as outdoor areas, an event space and a parking deck.
It is unclear precisely when the development will be finished and when to expect the second GelatoPazzo location to open, but as of now Stark expects it to take at least a year.
Although the GelatoPazzo locations currently in the works will go in beside PennePazze restaurants, the gelato concept is designed to be its own brand. Stark plans to expand the concept independently to new cities in the coming years.
