A meeting agenda for the Murfreesboro City Council includes a request for a sewer allocation variance for a commercial development project by Fresh Hospitality at Veterans Parkway.

The agenda reveals plans for a “multi-tenant commercial development with three commercial buildings to be located at the northeast corner of Veterans Parkway and Jack Byrnes Drive. The four tenants are all proposed to be restaurant uses.”

The lot in question is currently zoned for six single family units per acre, but the variance request anticipates usage equivalent to 23 single family units per acre.

Later on in the document, Bodnar Group is cited as the party requesting the variance. 

“The variance would allow Bodnar Group to develop four restaurants including Waldo’s Chicken & Beer, Vui’s Kitchen, Taziki’s, and Big Bad Breakfast.”

Waldo’s Chicken & Beer serves Southern fried chicken and rotisserie chicken. Vui’s Kitchen specializes in Vietnamese food. Taziki’s offers Mediterranean dishes like falafel and gyros. Big Bad Breakfast’s menu focuses on breakfast foods that can be eaten all day. All four of these restaurants and franchises have other locations open and operating in Tennessee according to each concept’s website.

Bodnar Group is a holding company with investments in software, manufacturing, information technology, food and beverage, retail, commercial real estate, packaged goods, and agriculture. One of its portfolio companies is Fresh Hospitality, which includes brands such as Jim ‘N Nick’s and I Love Juice Bar, as well as the four concepts proposed for Veterans Parkway.

Matthew Bodnar is a partner at Fresh Hospitality. Bodnar did not immediately respond to What Now Nashville’s request for a comment.

According to his LinkedIn profile, “Bodnar is the founder and managing partner of Eidolon Capital; the major investor and chairman of Williams Medical Group, Fresh Technology, Inc and Highland Industrial Staffing; and a founding partner of 3MC Capital Partners. Bodnar has a deep expertise in acquisitions from more than a decade investing with his family office Bodnar Investment Group.”

What Now Nashville has no estimate at this time of when construction will be completed and doors to the proposed restaurant might open.
