Bill’s Sandwich Palace moving to a new home

Bill’s Sandwich Palace is set to take over the building that formerly housed Sweet 16th at 311 N 16th St.

“It was just serendipity that made all this happen,” Christen Clemins told What Now.

Clemins own the restaurant with her husband, Aaron Clemins.

The Clemins’ friend, Matt Leff asked Ellen Einstein, the owner of Sweet 16th bakery, if she was willing to share her space with the restaurant owners. Einstein asked Leff if the Clemins wanted the whole space.

“We met with her the next day and we just really clicked,” Clemins said. “As another husband and wife food team we had a lot in common. We both just really feel that all of this timing happened for a reason.” 

Sweet 16th closed after owner Ellen Einstein announced that she will no longer be able to operate the local community bakery following the death of her husband Dan.

Currently, the Clemins run Bill Sandwich Palace on the weekends at 4204 Gallatin Pike inside TKO!

The Clemins plan to adjust their new space to be more of a sandwich shop. They plan to add a counter with some bar and window seats.

They also plan on bringing some fun sandwich options for lunch and possibly extending their hours, Clemins said.

“We want to be your neighborhood sandwich shop where everyone feels welcome,” she said.

The Clemins also plan to continue the tradition of changing their menus weekly, while having some more stock on hand.

“Lots of surprises and fun ideas to come,” Clemins said.

Other than selling different sandwiches such as Philly Phanatic (a sandwich with shaved roasted pork loin, chile and garlic braised greens), the Clemins also sells merchandise.
