An internationally known Japanese-Peruvian fusion restaurant will join the ranks of the Downtown Nashville restaurant scene. Chotto Matte announced on Jan. 12 it will open sometime this spring inside the ONE22ONE building at 1221 Broadway.

The founder of Chotto Matte is Kurt Zdesar, who opened the first location in 2013 in London.

“Nashville is absolutely the ideal setting for our vision. Each Chotto Matte is designed from the ground up to authentically integrate within the market it is within while maintaining our signature sense of excitement, occasion, and experience. We’re thrilled to have a home in Music City, and our restaurant will be truly a unique, can’t miss sensory experience that evolves Nashville’s offerings,” Zdesar said in a press release announcing the expansion.

In 2023, the Chotto Matte restaurant group will have six locations in the US, three in the UK, and two in the Middle East. Chotto Matte says they have plans to build a “strong presence” in the United States, with other locations recently announced for San Francisco and Los Angeles.

The name Chotto Matte translates to “wait a moment” in Japanese.

The menu at the eclectic restaurant features “Binchotan charcoal BBQ” as well as sushi, tempura dishes and shared plates.

A representative from Chotto Matte could not be immediately reached for comment.
