New Concept Called Cheese Lab In the Works from Taco Chela Owner

The mysterious concept appears to be in the early stages of development, but may open in the coming months inside of Nashville's popular food hall.

According to a new business license application filed with the Davidson County Clerk’s Office on February 1, a new restaurant may soon join Fifth and Broadway’s Assembly Food Hall at 5055 Broadway called Cheese Lab. The business owner is listed as Youssef Koutout, who is associated with another local Nashville restaurant, Taco Chela.

It’s currently unknown if the two dining concepts will share any similarities. Koutout operates one brick-and-mortar location of Taco Chela inside of L&L Market in The Nations as well as a food truck that sits at 413 Rep. John Lewis Way S. near Broadway. Cheese Lab does not yet have a social media presence or website set up, however, a mysterious hint on Taco Chela’s Facebook page describes “More details coming soon (Project under construction)” which may be about Cheese Lab.

Koutout first opened Taco Chela in 2020. The restaurant has since grown in popularity, boasting over 31.5K followers on Instagram and offers generous happy hour offerings and authentic Mexican cuisine and drinks.

What Now Nashville reached out to Koutout for additional comment regarding Cheese Lab, but did not immediately receive a response by the time of publication. This article will be updated with more information as it becomes available.
