Rony Stark, the owner of local Italian spot PennePazze, is behind the new gelato concept. The spot will offer a modern Italian shop feel and will combine traditional and chef fusion flavors, according to a release obtained by What Now Nashville from Portman Holdings, the developers behind Starling.

The concept will allow customers to experience gelato in true Sicilian style, with fresh brioche bread.

Both of Stark’s concepts GelatoPazzo and PennePazze will be joining the development. Though GelatoPazzo will be located beside PennePazze in this development, the gelato shop will be a separate brand, Stark said. As with PennePazze, which he aims to scale to 100 spots across the U.S. market, Stark has grand plans for GelatoPazzo.

“The gelato concept in Germantown will be close to PennePazze, but we will grow it as a separate chain,” Stark said. “We want to open 300 units of the gelato concept.”

Stark anticipates a fall 2025 debut for GelatoPazzo at the Starling.

GelatoPazzo will join multiple tenants that are filling in the 17,000 square feet of ground-floor retail space in the Starling complex. Along with PennePazze, other concepts like Solidcore, Kyuramen, Toastique, Social Cantina and Retrograde Coffee will be in the building.

“We are dedicated to bringing the best chef-driven concepts in the city to Starling, and PennePazze and GelatoPazzo are the perfect addition to the building’s dynamic dining mix,” Dotan Zuckerman, head of retail development for Portman, said in the release. “As the retail experiences at Starling continue to open, we can’t wait to see the community experience the activated ground floor that pulls in energy from the Greenway and the baseball stadium.”
