Poolside at Drift Hotel to Serve Frozen Cocktails This Spring

The new dining option is in collaboration with Alebrije chef, Edgar Victoria.

Alexis Soler is making moves again at the recently opened Drift Hotel. Soler oversees the boutique hotel’s multiple food and beverage programs, including the recently opened The Sun Room, Dawn coffee shop, and the newly announced Poolside dining option coming this spring.

An exact grand opening date is forthcoming, though the new concept may open just in time for pool season in late May or early June. The Nashville Scene announced the tentative opening as “later this spring.”

Soler is partnering with Alebrije owner Edgar Victoria to bring its Poolside customers the perfect pairing: a street taco and a refreshing cocktail. Victoria will offer his well-loved Mexican street food like al pastor pork shoulder tacos and loaded quesadillas with homemade mole sauce, refried beans, salsa macha, sour cream, and cheese. It’s also likely that some seafood and fish tacos will debut on the menu, according to the Scene article with Soler and Victoria.

The cocktail menu at Poolside has not been released in full detail, however, “frozen cocktails and buckets of beer” are mentioned as two of the options for guests. Soler is known in the craft cocktail community for being a mastermind mixologist, so Poolside will likely wow patrons just as Soler has done with her other cocktail-forward Nashville concepts No. 308, Old Glory, and Golden Pony.
