Limo Peruvian Eyeing Local Expansion in Three Areas

The authentic cuisine will be unveiled soon in East Nashville, along with a few other locations being looked at for future expansion.

The team behind the popular Music City food truck, The Inka Trailer, is gearing up for their grand opening of the brick-and-mortar concept Limo Peruvian Cuisine in East Nashville. To start, the team is offering a soft opening tomorrow, January 26, at 1008 Fatherland St. With the debut of the new concept at the forefront of their minds, co-owners Marcio Florez and Mauricio Sulay are already looking ahead at what’s next for their growing business.

The duo recently told the Nashville Business Journal that a goal of theirs is to expand Limo in Middle Tennessee after the first location gets its footing. “We are thinking about going to Mt. Juliet, Franklin, Lebanon is growing so quick right now, but it’s also our dream to span out of state,” Florez said in the NBJ article.

When asked about their future plans, business partner Luis Sulay told What Now Nashville that although there aren’t any official leases signed, the team is very interested in making more local moves in the near future.

“Our goal is definitely thinking in macro, for us, this is the start of a new culinary culture that we want to introduce Nashville to,” Sulay said. “Peruvian food is true fusion. From all the way to China to Italy, we have a tremendous amount of influence from multiple countries and that is exactly what we are trying to introduce Nashville to,” he added.

Sulay explained that the inspiration behind opening Limo can be traced back to the variety of dishes and flavors Peruvian cuisine has. The menu at Limo will include dishes that Sulay and Florez grew up around and feel obligated to show the world how good something can be if you care about it and put all your love and heart into it. 

“The concept is true and traditional Peruvian food mixed with a few plating concepts such as Tapas. Although Tapas is a Spanish concept, it allows us to introduce a new type of food to every guest who might not be as used to or have experienced Peruvian food in the past. It is easier to take down and share a smaller plate especially if the goal is to get your feet wet and explore a whole new culture,” Sulay shared.
