Owner Luis Segoviano plans to have the location open by August of this year, and he won’t stop there with the expansion. Over the next two years, Luis and his fiancé Angelica plan to open three more Louie’s Taco Shop and Bar locations across Tennessee, though the exact locations have not yet been determined.

The original Louie’s Taco Shop and Bar location is currently open in Antioch, a nearby Nashville suburb.

What Now Nashville spoke with Luis about the upcoming expansion and their renovation process to open soon in Bellevue.

“We’re so happy that our business is growing up, my fiancé and I work on our locations doing remodeling, painting, flooring, and all the decorations ourselves. Once we’re done with the construction and we’re open in Bellevue, we also handle the front-of-house customer service and run the place ourselves. We’re excited to bring the best tacos to Bellevue. Our birria tacos and quesabirrias are a family recipe that dates back to 1987 from my aunt and uncle’s shop in Tijuana,” Luis told What Now Nashville.

Along with birria tacos and quesabirrias, the menu at Louie’s Taco Shop and Bar Bellevue will closely mirror the Antioch location, offering nachos, fajitas, breakfast burritos, tres leches cake, and horchata. Both locations will be open from the hours of 10 a.m. – 10 p.m. during weekdays and 10 a.m. – 11 p.m. during weekends.

“On vacation in California, Luis fell in love with California-style Mexican food. After sampling the best California had to offer he knew he had to bring this amazing cuisine back to Nashville. Luis soon opened the first Louie’s Taco Shop & Bar, introducing Nashville to birria tacos. Customers flocked to the new restaurant and more locations are coming soon,” states the Louie’s Taco Shop website.
