The popular submarine sandwich chain Penn Station East Coast Subs will open this spring in the Nashville suburb of Springfield, located at 3522 Tom Austin Highway under Middle Tennessee franchise partner Jason Day.

What Now Nashville spoke with Day about the anticipation around opening another location in Tennessee.
“This will become our 8th location since October of 2020 in the Middle Tennessee area, and we’re planning on opening early April,” Day said.
“I’ve been with Penn Station for 20 years, it’s been fun bringing the chain to the area. When I first started there were only six locations, now there are 14. We somehow managed to pump out locations in the middle of covid back in 2020, when we opened four throughout the year,” said Day during a phone interview.
The restaurant is known for offering popular submarine-syle sandwiches, such as Philly cheesesteaks, Italian subs, BLT sandwiches, and veggie options including an artichoke sandwich and a variety of salads and wraps to choose from.
“This year, after Springfield, we’re hoping to expand with at least one other location in Cookeville, however, we’ve signed the lease there a while back and we’re waiting for some progress to happen with the building before we start anything else in the process,” Day said.
The restaurant will neighbor a few other businesses in the area, such as Zaxby’s, Whitt’s Barbeque, Sonic, and Taco Bell in the surrounding Springfield neighborhood.
“What we do differently from most sandwich shops like Jimmy Johns or Subway, is that we have a flat top grill that sets us apart, and we are the only sandwich shop franchise that makes fresh, hand-cut fries every day. If you’re ever craving a Philly cheesesteak and freshly made fries, we’re the place to visit. We also have fresh, hand-squeezed lemonade. We really pride ourselves on offering the best quality, fresh food for our customers,” Day told What Now Nashville.
